I Like Thursday #97

Good day, everyone! I'm a little late posting but I just got back Tuesday from my best friend's mother's funeral in Cleveland OH. From my Hampton Inn hotel there to home was 523 miles so quite a long drive. I have to admit it was not too bad driving it all by myself. I stopped when I wanted for as long or as short as I wanted. Also SiriusXM had free music so I listened to what I wanted and sang OUT LOUD!! Haha! My usual travel companions might not have enjoyed all that!

While in Cleveland, I met Vickie's mother's cat Jasper. What a sweetie-pie and he's HUGE! My friend is adopting Jasper and that made her mother happy.

Our prompt this week is what is our favorite store-bought or home-made Christmas treat. Of course I have one of each. Store-bought hands-down are my lebkuchen cookies from Germany. They come in to the Scott AFB commissary every Christmas and I buy several bags. If you don't know what they are, they are a gingerbread type of cookie. I like the ones that are chocolate dipped and have a light schmeer of jam inside. Don't wrinkle your nose -- they are so good!

As far as home-made cookies go, most years we make many kinds of cookies and pass them out to the neighbors. I'd say probably my favorite one is Snickerdoodles. I received some years ago from a friend when I lived in Maryland. She gave me her recipe and they are absolutely the BEST. This is how we make them:'

Snickerdoodles

                            1 C shortening                         2 t cream of tartar

                            1 1⁄2 C white sugar                   1⁄2 t salt

                            2 eggs                                    2 T white sugar

                            2 3⁄4 C all-purpose flour        2 t ground cinnamon

                            1 t baking soda

Preheat oven to 375 degrees. In a medium bowl, cream together the shortening and sugar. Stir in the eggs. Sift together the flour, baking soda, cream of tartar, and salt; stir into the creamed mixture until well blended. In a small bowl, stir together the 2 T of sugar and the cinnamon. Roll dough into walnut-sized balls, then roll the balls in the cinnamon-sugar. Place them onto an unprepared cookie sheet, two inches apart.

Bake for 8-10 mins. Edges should be slightly brown. Remove from sheets to cool on wire racks.

It's been hard to keep my nose out of my book lately. I started reading "Pachinko" by Min Jin Lee, a recommendation from my daughter. It's about a Korean girl back in the 1900s when Japan was expanding. So far some of it has been heartbreaking but there's also an inner strength that Sunja exudes. For a better explanation of the story's theme, read Goodreads's synopsis HERE.

Gracie and I have been enjoying the process of our neighborhood getting into the Christmas spirit. Each week there seems to be more & more lights twinkling our way to the trail. Speaking of Christmas, here's Brody not quite sure of Santa.

Earlier he met The Grinch at the mall.

High Five, Grinch!

No Way am I Going to Sit on Grinch's Lap

That's it from this corner of the world. Check out all the other I Like Thursday posts from today and go make yourself some cookies!

  1. Hi Susie! What a good friend you are. That's a long drive but singing to the radio without any comments from the peanut gallery is fun, isn't it?! I hold quite the concert on my way home every day. HAHA! No go on the Grinch. Maybe next year. {{Hugs}} ~smile~ Roseanne

  2. The lebkuchen sound yummy, and I love snickerdoodles, too. Your book sounds really interesting- I'll have to put it on my list. I don't blame Brody for being a little leery of Santa - my kids always were, too!

  5. I don’t blame Brody for skipping the Grinch’s lap. Santa still gives me the willies and I’m 68 young, lol. Your store-bought favorites sound delightful. Ginger and chocolate, what a yummy combination. Cheers!
